New mothers have a lot to look after. They have to take care of the newborns and themselves together. The most important thing for a new mother to keep in mind is what she should eat. She has to eat healthy to stay healthy herself and to have a healthy baby. Whatever she eats, reaches the baby through her milk and mothers milk is the only food that a baby is supposed to consume in first 6 months of their life and thats what we are talking about today. Often, new and nursing mothers have a little problem with lactation, sometimes it is too less sometimes it is irregular. Different people suggest different things to eat, oats, chia seeds, honey, almond, fennel seeds etc, but how do we eat them? So here is a recipe that combines the goodness of all these ingredients, (and more) it tastes great and is beneficial for nursing mothers.

 

Ingredients

 

2 cups organic rolled oats

 

1/2 cup organic palm sugar

 

1/4 cup corn flour

 

1/4 cup dry active yeast

 

1 tablespoon fennel seed

 

1 teaspoon baking powder

 

1/2 teaspoon baking soda

 

1/2 teaspoon rock salt

 

1/2 cup almond butter

 

1/4 cup, plus 2 tablespoon ghee

 

2 eggs

 

1/4 cup chia seed

 

2 tablespoon organic honey

 

1/2 teaspoon organic vanilla extract

 

Recipe

 

Pre-heat oven at 180-degrees Centigrade.

 

Dry roast the rolled oats, fennel seeds, chia seeds separately. This step is optional, but it will enhance the taste and nutrients of these ingredients.

 

Put your 2 cups of rolled oats into a blender or food processor. Blend until the oats turn into oat flour.

 

Now grind the fennel seeds in a coffee grinder or with mortar and pestle until finely powdered.

 

Also finely grind the chia seeds in a coffee grinder until a fine powder is formed.

 

Put dry ingredients into large bowl and mix.

 

In a smaller bowl, put the almond butter, ghee, organic honey, eggs and vanilla extract. Mix well.

 

Pour the wet ingredients into the dry ingredient and mix well with a spoon or clean hands.

 

Grease a cookie sheet with ghee. Make small flat balls, about the diameter of 1 inch.

 

Bake cookies in the oven for 15-20 minutes. Check for slightest browning on the outside of the cookies.

 

Take out and transfer cookies to a cooling rack.

 

Enjoy warm, or let cookies cool to room temperature. Then store in an air-tight container.

 

Enjoy for breakfast with milk, hot chocolate or even with yogurt. You can also have it as a dessert or snack throughout the day.

Almonds: They are rich source of monounsaturated fatty acids, protein, Folate (Vitamin B9) Choline, Vitamin E, Calcium, Magnesium, Phosphorous, and Potassium. Almonds boost memory, provide instant energy.

 

Ghee: Ghee is also useful for lactose intolerants because when ghee is made out of butter, it looses all the impurities and milk solids. Regular consumption of ghee keep the joints smooth and friction free. It helps to aid digestion and boosts weight loss. Ghee carries medicinal properties thus enhance the flavor and nutrients of herbs and spices, when used together. It also reduces blood cholesterol.

 

Chia seeds: Chia seeds are rich in dietary fibre and polyunsaturated fatty acids and minerals like phosphorus, calcium, potassium, and magnesium.

 

Organic Honey: Organic honey is healthy alternative to regular white sugar (contains 38.2% of fructose, 31.3% of glucose)
