MUTABAL 

This Eggplant dip is packed with iron, calcium and minerals required by our body. Eggplant (Baingan) has been misunderstood by many for being a non-nourishing food but this vegetable contains essential nutrients. Eggplant is low in calories and has a high fibre content. Frying eggplant loses all benefits from this vegetable, instead grill, roast, bake or stew eggplant. Sesame seeds are good source of manganese and copper along with calcium, magnesium, iron and phosphorous, vitamin B1, zinc & dietary fibre. This combination of Eggplant & sesame seeds makes it a healthy option for dieter’s too. Go easy on the Olive oil intake while on diet. 

  • INGREDIENTS
  • Eggplant - 1 big
  • Garlic - 2 big cloves
  • Sesame seeds - 2 table spoons
  • Salt - to taste
  • Lemon Juice - 2 teaspoons
  • Olive Oil - 2 table spoons. 

METHOD

Grill the eggplant until it is cooked. You can grill it on top of a gas stove. Peel the skin. Now grind all the ingredients together in a mixer grinder until it is smooth. Serve it little cold. Garnish with olives and olive oil.
