Take about 500 gm of sweet potatoes, boil, peel and mash them. Add about 4 tbsp. of coconut cream concentrate and blend well in an electric mixer. Now add 2 eggs, 1/2 cup of coconut sugar, 1tbsp vanilla extract, 11/2 tsp of cinnamon powder and 2 tbsp. butter and churn in the blender again. Pre-heat the oven at about 350 degrees and spread the blended paste evenly into an 8x8 pan greased with some coconut oil. Brush the mix with 2 tbsp. of melted butter and sprinkle about ½ tsp of cinnamon and 2 tsp of brown sugar. Bake for about 45 minutes. Your breakfast is ready to serve!

No snacksare complete without the crunchy taste of cookies. Bake your own cookies at home using coconut oil. It is good to add Coconut cookies to your delectable list of home-made specialties.

To make coconut cookies, preheat the oven to 350 degrees. Shred about 51/3 cups and set aside 2 cups of the sweetened shredded coconut. Put the remaining coconut in a food processor and process until finely ground along with 1 cup sugar, ½ tsp salt, and ¼ tsp baking powder. Add ½ cup of chilled unsalted butter, and blend until it is lump-free. Add 1 large egg and 1 tsp of vanilla extract and mix till smooth. Now add 11/2 cups all-purpose flour; and knead into a crumbly dough. Do not over process the dough for best results.

Roll the dough into small balls, coating with coconut. Arrange these balls on a baking sheet and bake for about 25-30 minutes, until light golden. Cool and your cookies are ready to be served. Time now for a good tea break with your family and friends with this sumptuous delicacy.

No Indian meal is complete without the Indian-styled chutney to add as an accompaniment. Try a coconut oil based chutney this season to make your meals memorable one!

Pulse 3 tbsps. of unsweetened shredded coconut, 1/8 teaspoon black salt, 1/3 cup fresh chopped organic cilantro. 1 green Thai chili pepper, 1 tsp organic cumin seeds and 1/4 tsp chopped ginger, together in the mixer. Add water to get desired consistency and mix well. Empty the blended paste into a bowl and squeeze about 1 tsp lemon juice over it. Mix well to get your chutney ready to eat!

Enjoy the chutney with tortilla chips or use as a spread on sandwiches.

Frantic about what to cook for the dinner party? Try preparing a lip-smacking meal of Cottage Cheese Coconut Cream Curry Stew. Wondering how to accomplish this! This is a fairly easy dish to cook. Here are the simple steps:

Sauté some (1 small diced one!) onion and 4 cloves of garlic in coconut oil until onion is soft. Add 500 gm of cottage cheese cut into small cubes and sauté for another 2 minutes.Add 2 tsp curry, 1 tsp cumin, 1 tsp turmeric and salt and pepper to taste, along with 3 tbsp. of coconut cream concentrate. Cover and simmer for 30-35 minutes till the paneer seems ready.  Add small cubes of 1 medium-sized sweet potato, 1 medium-sized chopped carrot, some baby Bella mushrooms and 1 medium sized chopped zucchini and continue cooking till the vegetables are soft and cooked. Serve your stew with rice and plain yogurt.
