Ingredients
3 very ripe bananas, mashed
1 egg
1/4 cup plain or Greek yogurt or sour cream
1/4 cup ghee
3 Tablespoons milk or buttermilk
1 Tablespoon vanilla extract
1 cup flour
1 cup rolled oats
3/4 cup brown sugar
1 1/2 teaspoons baking soda
1/4 tsp salt
Recipe
Preheat the oven to 200-degrees Centigrade. Grease a muffin tin with ghee and set aside.
Mash the bananas in a large bowl. Add the egg, yogurt/sour cream, oil, milk, and vanilla extract.
In another mixing bowl, add the flour, oats and sugar and then add the baking soda and salt.
Blend everything together, just until smooth.
Pour the batter into the muffin cups (you can fill them all the way up to the rim) and bake for 20 minutes or until the top layer is turned deep golden brown in color and they spring back when you gently press the top layer.
Let cool slightly and serve. Tastes best when a little warm and served with your favorite jam.
