Recipe:
Serving size: 10-12 mini frittatas
Ingredients:
- 1/2 cup Organic Quinoa
- 4 eggs
- 1 cup shredded carrot
- 3/4 cup shredded cheddar cheese
- 1/2 cup chopped onion
- Salt and pepper to taste
Procedure:
- Pre-heat oven to 350°F. Line the cupcake moulds and coat with non-stick spray.
- Place Quinoa along with a cup of water in a saucepan. Bring it to a boil and reduce heat to let it simmer for 15 minutes, until Quinoa is translucent and cooked.
- Remove it from the oven and set it aside.
- In a separate bowl, whisk eggs, carrot, cheddar and onion. Add in the cooked Quinoa and stir to combine. Add salt and pepper to taste.
- Spoon the mixture into the prepared cupcake moulds and bake for 25 minutes, until fully cooked.

Serve it with a tangy tomato sauce or creamy mayonnaise. You can relish 3 to 4 frittatas with a glass of your favourite smoothie or freshly squeezed orange juice to complete a powerful breakfast.
