   BROKEN WHEAT UPMA  

Broken wheat is complex carbohydrate hence it is a good food for diabetic patients. It aids digestion, healthy nerves and prompt energy due to presence of thiamine in wheat. Broken or Split wheat also contains several minerals like zinc, iron and riboflavin that is essential to the intensity and purity of hemoglobin. This recipe is also a good source of protein, energy and fiber.

INGREDIENTS

  • Split Wheat/Dalia (Washed) – 1 Cup
  • Finely chopped onion – 1
  • Finely chopped ginger – 1 tsp
  • Finely chopped green chillies – 2
  • Green peas – ½ cup
  • Chopped Cauliflower – ½ cup
  • Finely chopped carrots – ½ cup
  • Water – 1 cup
  • Chopped cashew nuts -  1 tsp
  • Mustard seeds  – ½ tsp
  • Lemon juice – 1 tsp
  • Finely chopped fresh coriander leaves – 1 tsp
  • Pure Ghee  – 1 tsp
  • Rock Salt as per your taste.
METHOD

Put pan on stove and add some pure ghee. Add mustard seeds into heated ghee to crackle. Fry cashew until it turns light brown. Put chopped onions into the pan and fry it. Add green chillies, ginger and all other vegetables into pan. Fry them for two to three minutes. Add split wheat/dalia and stir it for at least 2 minutes, then add water. Cover the pan with a lid, on medium heat let it cook until the water gets dried up. Place the cooked dalia into a bowl and mix it gently while adding lemon juice. In the end, garnish with chopped coriander leaves and serve it hot.
