  RAJMA TIKKI

Rajma or Kidney beans are rich in soluble & insoluble fiber. They contain high folate, protein & mineral content as well as high level of magnesium which helps to improve the blood, oxygen & nutrients flow in the body. This recipe has high nutrition value hence healthy too. It can be made as a starter or served as a tasty snack for kids and also for adults.

Soak red kidney beans overnight. Take sufficient quantity of water and cook it in a pressure cooker. After cooking, drain the rajma completely and allow it to cool. Pulse the rajma in a mixer 2-3 times in order to make it coarse. Chop ginger, onion and green chilies finely. Heat 1 tsp oil in a pan and add green chilies and ginger. Sauté for 1 minute. Add chopped onion and sauté till it turns pink in colour. Now add boiled and mashed potato, pulsed rajma, garam masala powder, chaat masala powder, turmeric powder and rock Salt according to taste. After adding all the above ingredients, allow it to cook on a low flame for 4-5 minutes. To avoid sticking, stir the mixture continuously. Take off fire. Add coriander leaves, grated cheese and corn flour 2 tbsp and mix all the ingredients well. Keep the dish aside and allow it to cool. Take the above mixture in your hand and make small lemon size balls, flatten it between the palms. Spread the remaining corn flour evenly in the plate. Coat the tikkis with them on both sides by rolling it on the plate. Heat the griddle or non stick tava, put tikkis on it and drizzle some drops of oil over tikkis and cook it till it turns brown in colour. Serve the hot rajma tikkis with tomato ketchup or no oil chutney/pickle.

SUBSTITUTE

  • Fine bread crumbs are also used for the coating of rajma tikkis in place of corn flour.
  • Paneer or cottage cheese can also be used instead of cheese for low calorie recipe.
