Soy is rich in isoflavonoids and phytoestrogens in addition to having very high protein content. The rich protein content along with considerable quantities of fibre is very good for health since it aids cell growth and repair.

Including soy in your daily diet has a lot of benefits since it helps in maintaining health and is effective against cardiac problems, diabetes, muscle pain, cancer, low immunity conditions and many other conditions.

Soy is processed as soy milk, soy powder, soy chunks, miso, tofu, Tempe, edamame, soy yogurt and soy butter that can be used in many interesting and creatively prepared recipes at home.

Here are a few Soy recipes that you could make at home.

  1. Scrambled tofu and spinach

Take one pack of soy tofu and cut it into half inch cubes by draining any excess water content. Add half a teaspoon each of Organic Turmeric powder, freshly ground black pepper, quarter teaspoon each of salt, cayenne pepper and mix thoroughly. In a separate vessel, take washed and cut spinach leaves. Make sure that you have at least three cups of cut spinach and two cups of cut tofu.

In a frying pan, take two tablespoons of Olive Oil and allow it to heat. Add three chopped onions and fry until golden brown. Once fried, add two chopped tomatoes and stir well until the tomato softens. Add tofu mixture and stir well for about five minutes until the tofu is slightly brown and resembles scrambled eggs. Now, add the cut spinach, two tablespoons of lemon juice and quarter teaspoon of salt and stir well until the spinach welts. Remove from heat and garnish with cut coriander leaves or basil leaves and serve when hot.

 It is a wonderful breakfast option since it contains rich protein content which keeps you active and energized throughout the day. It is also a balanced diet since it contains greens, proteins and carbohydrates in a balanced proportion.

  1. Egg plant and tofu curry

This is a delectable recipe that is nutritious also. Make ginger, garlic, chilli paste by taking five cloves of garlic, one teaspoon of cut ginger and one full jalapeno or chilli and grinding them well together by adding a little bit of water. Take three whole tomatoes and cut them into small pieces, drain the tomato juice and leave it in a separate cup. Put cut tomato pieces in a separate cup. Chop 2 eggplants into half inch pieces. Also, take one pack of soy tofu and cut into half inch pieces. Prepare one cup of cut onions, two cups of cut spinach and two cups of coconut milk.

Take a fry pan and add one tablespoon of Sunflower Oil. Add cut onions and cook until the onions soften and become golden. Add two more tablespoons of sunflower oil and add the egg plant and ginger, garlic, chilli paste and fry well. Add one teaspoon of curry powder, cut tomatoes and cook well until you can smell the aroma and can see the tomatoes soften. Now add the tomato juice and half a cup of water and cook for about 5 minutes until mixture is not raw and is well blended. Now add the tofu and coconut milk and mix well. Cook for 5 minutes until the egg plant becomes tender. Now, add the cut spinach leaves and cook until they welt. Season with salt and black pepper powder and serve when hot.

This can be served with plain rice or mildly seasoned rice. For your afternoon, this makes for a carbohydrate, protein and fibre rich meal.

  1. Carrot, ginger, tofu soup

A good start to supper is with a rich and healthy soup. Take a fry pan and add two tablespoons of vegetable oil to it. To this, add two cups of cut carrot, one cup of cut onion and two tablespoons of cut garlic. Fry well until they soften and season with salt and pepper. Add a teaspoon of curry powder, one cup of Soy milk and two cups of water and allow the vegetables to boil for about twenty minutes.

Meanwhile, take half a cup of cornstarch and one teaspoon each of curry powder, salt and pepper and mix well. Cut a pack of tofu into half inch cubes and dip them in this mixture. Take six tablespoons of vegetable oil in a fry pan and heat well. Add the patted tofu pieces to the oil and fry until golden brown. Dab the fried tofu with paper towels and allow it to remain open in a plate in order to become crisp.

Once the soup is well-cooked, remove it from stove and allow it to cool. Grind well in a blender by adding water. Make a puree from the cooked soup and thin it down by adding as much water as you want. You can then garnish it with the fried tofu and cut cilantro.

This carrot and ginger soup is an appetizer and the fried tofu in it makes it tastier.

  1. Tofu noodle

Take a pack of plain noodles (udon noodles preferred) and cook as per instructions. Drain excess water. Cut a pack of tofu into small pieces and cut and keep one cup each of spinach, capsicum, half a cup of spring onions and lettuce.

Fry the tofu pieces dry in a shallow pan with two tablespoons of Organic Peanut Oil until they turn golden brown.

Take two tablespoons of Sesame Oil in a fry pan and add two cut onions, one teaspoon of red chilli flakes, one cut capsicum and stir well until golden brown. Now add the spinach, spring onions and lettuce until they soften. Add two tablespoons of Soy sauce and mix well. Add the cooked noodles and fried tofu and toss after adding required amount of salt and pepper.
