MOONG DAL FUDGE

This easy to make lentil dessert will ensure that your Holi is not only colourful but also sweet! Moon Dal Halwa sweet is considered auspicious during Holi Festival.This Fudge is a variation of the good old Halwa. Keep your patience to make this dish as it requires little bit of preparation before you start the actual work.

INGREDIENTS 

  • 1 cup of organic split yellow gram (moong dal) – washed and soaked in water for 4 hours
  •  1 cup warmed milk
  •  1 cup warm water
  •  1 ¼ cup sugar
  •  Half tsp cardamom (elaichi) powder.
  •  Few roasted saffron strands (kesar)
  •  Half cup ghee
  •  2 tbsp finely sliced almonds and pistachios for garnish. 

METHOD

Drain out the moong dal and grind coarsely using minimum water. In case of excess water, drain the water using a strainer.Warm 1 tbsp of milk and add saffron to extract its flavor. Keep aside.Use a non-stick pan to melt the ghee.To the ghee, add the moong dal paste and stir continuously on a low flame till it turns golden brown.Add the water and milk and cook. Stir continuously.Add the sugar. Cook on a slow flame till the ghee separates.Add the saffron, cardamom powder and mix.Pour the contents on a flat plate and let it cool.Cut into diamond /rectangle pieces.Before serving, garnish with the dry fruits.
