Recipe 1: Quinoa Stuffed Bell Peppers

Ingredients:

With a cooking time of about 50 minutes, this dish is not just filling but makes a perfect vegan alternative to any meat dish!!

Here’s all that you would need to get this dish prepared:

  • 3 cups of cooked and cooled organic quinoa
  • 4 oz. green chilies
  • 1 cup of corn kernels
  • ½ cup rinsed and drained black beans
  • ½ cup diced tomatoes
  • ½ cup jack cheese (shredded)
  • ¼ cup feta cheese (crumbled)
  • 3 tbsp. chopped cilantro leaves
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder
  • Salt &black pepper (ground), to taste
  • 6-8 bell peppers, stemmed and seeded with their tops cut

Preparing the Quinoa Stuffed Bell Peppers:

Mix the organic quinoa and all the other ingredients in a large bowl and fill the mixture in each of the bell pepper cavities with the help of a spoon. Now, place these onto a baking dish, lined with a parchment paper, with the cavity-side of the bell peppers upwards. Place the baking dish in an oven preheated to up to 350 degrees and bake the peppers until they become tender or for at least 25-30 minutes. Serve hot.

Recipe 2: Cheesy Quinoa & Black Beans Stuffed Bell Peppers

For those who love a dash of cheese, here’s an alternate recipe for quinoa stuffed bell peppers with a cheesy twist!

Ingredients:

  • 1 cup organic quinoa (uncooked)
  • 6-7 large bell peppers
  • 15 oz. black beans (drained)
  • 4 cups grated cheddar cheese
  • 3-4 finely sliced green onions
  • 1 tsp ground cumin
  • ½ cup chopped cilantro leaves
  • Salt to taste

Preparing the Cheesy Quinoa Stuffed Bell Peppers:

Start with preparing the bell peppers for stuffing: Cut each of the bell pepper at the top, removing the core (with seeds). Now bring to boil about 3 quarts of water with 2 tsp of salt added to it. Place the deseeded peppers in the boiling water for about 2-3 minutes and then remove them and place them onto a baking dish.

In the parallel, take the organic quinoa with 2 cups of water and ½ tsp of salt in a saucepan and bring to boil. Cook for 12-15 minutes with the saucepan covered with a lid. Remove from heat and spread the cooked quinoa onto a baking dish to cool off.

For the stuffing, take the cooked quinoa in a large bowl and mix it with the black beans, cumin, green onions, cilantro and 2 cups of the grated cheese. Stuff the bell pepper cavities with this mixture and place them back onto the baking dish with ¼ cup of water to cover their bases.

Cover the baking dish with an aluminum foil and bake this at 350°for 30-35 minutes. Remove the dish from the oven and top the peppers with the remaining 2 cups of grated cheese. Cook again for 5-10 minutes in the oven (this time uncovered!!). Garnish with some green onions and serve hot.
