ZERO OIL - SOYA BEAN PATTIES

Soya bean has the highest protein content amongst plant products. It has 43 percent protein. It is the only vegetable food that contains all 8 essential amino acids. The World Health Organization (WH0) and the US Food and Drug administration use an alternative method for evaluating protein quality called the protein digestibility corrected amino acid score (PDCAAS). The PDCAAS of soy protein isolate is 1.0 which makes soya protein equivalent to animal protein in quality and higher than other plant protein foods.

INGREDIENTS

  • 1 cup boiled Whole Soya bean (Overnight soaked and cooked in a pressure cooker)
  • 1tbsp chopped Fresh coriander leaves
  • 4-5 stalks fresh spring onion
  • 1 small size onion finely chopped
  • ½ tsp cumin powder
  • ¼ tsp pepper powder
  • ½ tsp chopped green chilli
  • 2 tbsp gram flour (besan)
  • Salt to taste
  • 3/4 cup  Brown Bread crumbs.

METHOD

Grind together boiled and drained soyabean, chopped coriander, spring onions and green chilli in a food processor to a coarse mixture. Dry roast the gram flour for 2 mins in a wok. Take a large mixing bowl and put the soyabean mixture along with gram flour. Add cumin powder, pepper powder, chopped onion and salt to taste. Knead the mixture well and make small bite size patty with the mixture. Coat each patty evenly with bread crumbs. Heat a non-stick pan and cook the patties till crisp on both sides. This recipe serves about 4 people.

It makes a good combination with all green salad and yoghurt dip or a green chutney.
